Ingredients 

Meatballs

  • 1 lb ground beef
  • ½ cup uncooked white rice
  • 1 egg beaten
  • 2 cloves garlic minced
  • ¼ cup chopped fresh cilantro
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Soup

  • 1 onion chopped
  • 2 cloves garlic minced
  • 8 cups chicken broth
  • 2 carrots sliced
  • 2 zucchini sliced
  • 1 cup frozen peas
  • 1 cup chopped fresh cilantro
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. In a mixing bowl, combine ground beef, rice, egg, garlic, cilantro, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, sauté onion and garlic until soft.
  3. Add chicken broth and bring to a boil.
  4. Add meatballs to the pot and reduce heat to a simmer. Cook for 20 minutes.
  5. Add carrots, zucchini, peas, cilantro, salt, and pepper. Simmer for another 20 minutes.
  6. Serve hot and enjoy!
