Albondigas Meatball Soup Recipe

Meatballs
- 1 lb ground beef
- ½ cup uncooked white rice
- 1 egg beaten
- 2 cloves garlic minced
- ¼ cup chopped fresh cilantro
- 1 teaspoon salt
- ½ teaspoon black pepper
Soup
- 1 onion chopped
- 2 cloves garlic minced
- 8 cups chicken broth
- 2 carrots sliced
- 2 zucchini sliced
- 1 cup frozen peas
- 1 cup chopped fresh cilantro
- 1 teaspoon salt
- ½ teaspoon black pepper
In a mixing bowl, combine ground beef, rice, egg, garlic, cilantro, salt, and pepper. Mix well and form into small meatballs.
In a large pot, sauté onion and garlic until soft.
Add chicken broth and bring to a boil.
Add meatballs to the pot and reduce heat to a simmer. Cook for 20 minutes.
Add carrots, zucchini, peas, cilantro, salt, and pepper. Simmer for another 20 minutes.
Serve hot and enjoy!
