Main Ingredients
- 2 cups elbow macaroni uncooked
- 3 large eggs hard-boiled and chopped
- 1 cup celery chopped
- 1 cup red bell pepper chopped
- ½ cup red onion finely chopped
Dressing Ingredients
- 2 cups mayonnaise
- ¼ cup white vinegar
- ⅓ cup sugar
- 2 tablespoon yellow mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon paprika
Cook the macaroni according to the package instructions. Drain and rinse under cold water.
In a large mixing bowl, whisk together the mayonnaise, white vinegar, sugar, mustard, salt, pepper, and paprika.
Add the cooked macaroni, chopped eggs, celery, red bell pepper, and red onion to the bowl. Stir to combine.
Cover and refrigerate for at least 1 hour before serving.
