Beef and Barley Stew

Main Ingredients
- 1 lb Beef Stew Meat cut into bite-sized pieces
- 1 cup Pearl Barley
- 4 cups Beef Broth
- 2 cups Water
- 1 large Onion chopped
- 3 cloves Garlic minced
- 3 large Carrots sliced
- 2 stalks Celery sliced
- 2 tablespoon Tomato Paste
- 1 teaspoon Dried Thyme
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black Pepper to taste
1. In a large pot, brown the beef stew meat over medium heat.
2. Add the chopped onion and minced garlic, cooking until softened.
3. Stir in the tomato paste, thyme, salt, and pepper.
4. Add the beef broth, water, barley, carrots, and celery.
5. Bring to a boil, then reduce heat and simmer for about 2 hours, until the meat and barley are tender.
6. Adjust seasoning to taste before serving.
