Beef Stew with Dumplings

Stew Ingredients
- 2 lbs Beef Chuck cut into cubes
- 2 tablespoon Olive Oil
- 1 Onion chopped
- 3 cloves Garlic minced
- 4 cups Beef Broth
- 2 Carrots sliced
- 3 Potatoes diced
- 2 tablespoon Tomato Paste
- 1 teaspoon Thyme dried
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
Dumpling Ingredients
- 2 cups All-Purpose Flour
- 1 tablespoon Baking Powder
- ½ teaspoon Salt
- 1 cup Milk
- 2 tablespoon Butter melted
Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
Add onion and garlic, cook until softened.
Stir in tomato paste, thyme, salt, and pepper. Cook for 2 minutes.
Add beef broth, carrots, and potatoes. Bring to a boil, then reduce heat and simmer for 1.5 hours.
For dumplings, mix flour, baking powder, and salt in a bowl. Stir in milk and melted butter until just combined.
Drop spoonfuls of dumpling batter onto the simmering stew. Cover and cook for 15 minutes.
