Ingredients 

Main Ingredients

  • 3 lbs Beef chuck roast
  • 5 cups Beef broth
  • 2 Dried guajillo chiles stems and seeds removed
  • 2 Dried ancho chiles stems and seeds removed
  • 1 White onion quartered
  • 4 cloves Garlic
  • 2 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 2 Bay leaves

Instructions 

  1. 1. In a large pot, add beef, beef broth, guajillo chiles, ancho chiles, onion, garlic, oregano, cumin, bay leaves, and salt. Bring to a boil.
  2. 2. Reduce heat and simmer for about 3 hours, until beef is tender and shreds easily.
  3. 3. Remove beef from the pot and shred with forks. Strain the broth and reserve.
  4. 4. Heat corn tortillas on a skillet. Dip them in the reserved broth before filling with shredded beef.
  5. 5. Garnish with chopped cilantro, diced onions, and lime wedges. Serve with extra broth for dipping.
