Main Ingredients
- 3 lbs Beef chuck roast
- 5 cups Beef broth
- 2 Dried guajillo chiles stems and seeds removed
- 2 Dried ancho chiles stems and seeds removed
- 1 White onion quartered
- 4 cloves Garlic
- 2 teaspoon Dried oregano
- 1 teaspoon Ground cumin
- 2 Bay leaves
1. In a large pot, add beef, beef broth, guajillo chiles, ancho chiles, onion, garlic, oregano, cumin, bay leaves, and salt. Bring to a boil.
2. Reduce heat and simmer for about 3 hours, until beef is tender and shreds easily.
3. Remove beef from the pot and shred with forks. Strain the broth and reserve.
4. Heat corn tortillas on a skillet. Dip them in the reserved broth before filling with shredded beef.
5. Garnish with chopped cilantro, diced onions, and lime wedges. Serve with extra broth for dipping.
