Preheat oven to 350°F (175°C).
In a mixing bowl, combine flour, sugar, baking powder, and salt.
In another bowl, beat eggs and vanilla extract. Gradually add to the dry ingredients and mix until combined.
Fold in the chopped almonds.
Divide the dough in half and shape each half into a log about 12 inches long. Place on a baking sheet.
Bake for 25-30 minutes, or until golden brown. Remove from oven and let cool for 10 minutes.
Reduce oven temperature to 325°F (165°C). Slice the logs into ½-inch thick slices and place back on the baking sheet, cut side down.
Bake for an additional 10-15 minutes, or until crisp. Let cool before serving.
