Ingredients

  • 1 can Black Beans rinsed and drained
  • 1 can Corn drained
  • 1 medium Red Bell Pepper diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Cilantro chopped
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Cumin
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions 

  1. In a large mixing bowl, combine the black beans, corn, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for later.
