Ingredients

  • 4 cups Broccoli florets
  • 1 cup Shredded cheddar cheese
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 2 tablespoon Butter
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  2. 2. Add the broccoli florets and broth to the pot. Bring to a boil, then reduce the heat and simmer until the broccoli is tender, about 15 minutes.
  3. 3. Use a blender or immersion blender to puree the soup until smooth. Return the soup to the pot.
  4. 4. Stir in the heavy cream and shredded cheddar cheese. Cook over low heat until the cheese is melted and the soup is heated through. Season with salt and pepper to taste.
  5. 5. Serve hot, garnished with additional shredded cheese if desired.
