Cajun Chicken and Sausage Gumbo

- 1 lb chicken thighs cut into bite-sized pieces
- 1 lb andouille sausage sliced
- ½ cup vegetable oil
- ½ cup all-purpose flour
- 1 green bell pepper chopped
- 1 onion chopped
- 2 stalks celery chopped
- 4 cloves garlic minced
- 6 cups chicken broth
- 2 teaspoon Cajun seasoning
- 1 teaspoon dried thyme
- 2 cups okra sliced
- 2 cups cooked white rice
1. Heat oil in a large pot over medium heat. Stir in flour to make a roux, cooking until it turns a deep brown color.
2. Add the bell pepper, onion, celery, and garlic. Cook until vegetables are tender.
3. Stir in the chicken and sausage, cooking until the chicken is no longer pink.
4. Pour in the chicken broth, add Cajun seasoning and thyme. Bring to a boil, then reduce heat and simmer for 45 minutes.
5. Add the okra and cook for another 10 minutes.
6. Serve gumbo over cooked white rice.
