Ingredients 

Main Ingredients

  • 2 lbs Beef shank cut into chunks
  • 1 Onion quartered
  • 3 cloves Garlic minced
  • 2 Carrots sliced
  • 2 Zucchini sliced
  • 2 Corn on the cob cut into chunks
  • 4 cups Beef broth
  • 2 Potatoes quartered
  • 1 bunch Cilantro chopped
  • to taste Salt
  • to taste Pepper
  • 1 Lime cut into wedges, for serving

Instructions 

  1. 1. In a large pot, add the beef shank, onion, garlic, and enough water to cover the meat. Bring to a boil, then reduce heat and simmer for about 1 hour until the meat is tender.
  2. 2. Add the carrots, zucchini, corn, beef broth, and potatoes to the pot. Continue to simmer for another 30-40 minutes until the vegetables are tender.
  3. 3. Season with salt and pepper to taste. Stir in the chopped cilantro just before serving.
  4. 4. Serve hot with lime wedges on the side.
