Ingredients 

Shells

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 tablespoon cold butter, cut into small pieces
  • 1 egg lightly beaten
  • ½ cup white wine

Filling

  • 2 cups ricotta cheese drained
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup mini chocolate chips

Instructions 

  1. In a mixing bowl, combine flour, sugar, cinnamon, and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Add egg and wine, mix until dough forms. Knead until smooth. Cover and let rest for 30 minutes.
  3. Roll dough to ⅛ inch thickness. Cut into 4-inch circles. Wrap around cannoli molds and seal edges.
  4. Fry in hot oil until golden brown. Drain on paper towels and let cool.
  5. For filling, beat ricotta, powdered sugar, and vanilla until smooth. Fold in chocolate chips.
  6. Fill cooled shells with ricotta mixture. Serve immediately.
