Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil
  • 4 eggs
  • 3 cups grated carrots
  • 1 cup chopped walnuts optional

Instructions 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Make a well in the center, and add oil, eggs, and grated carrots. Mix until well combined. Stir in walnuts if using.
  3. Pour batter into prepared pan. Bake in preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
