Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 can diced tomatoes
  • 4 eggs
  • to taste salt and pepper
  • ¼ cup fresh parsley, chopped

Instructions 

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Cook until softened, about 5 minutes.
  2. Add the minced garlic, cumin, paprika, and ground coriander. Cook for another 1-2 minutes until fragrant.
  3. Pour in the diced tomatoes and season with salt and pepper. Simmer for 10 minutes until the sauce thickens.
  4. Make small wells in the sauce and crack the eggs into each well. Cover the skillet and cook until the eggs are set, about 5-7 minutes.
  5. Garnish with fresh parsley and serve hot with crusty bread.
