Ingredients 

Main Ingredients

  • 1 lb Chicken Breast diced
  • 1 cup Rice
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 1 small Onion diced
  • 6 cups Chicken Broth
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add diced chicken and cook until browned.
  2. 2. Add diced onions, carrots, celery, and minced garlic. Cook until vegetables are tender.
  3. 3. Pour in chicken broth, add rice, salt, pepper, and thyme. Bring to a boil.
  4. 4. Reduce heat and let it simmer for about 20 minutes or until rice is cooked.
  5. 5. Adjust seasoning if needed. Serve hot.
