Main Ingredients
- 1 cup rice
- 1 lb chicken, cut into pieces
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 thumb-sized ginger, sliced
- 6 cups chicken broth
- 2 tablespoon fish sauce
- Salt and pepper to taste
- 2 hard-boiled eggs, sliced
- Green onions, chopped (for garnish)
- Fried garlic (for garnish)
- Lemon or calamansi (optional)
Heat oil in a pot. Sauté garlic, onion, and ginger.
Add chicken and cook until lightly browned.
Pour in fish sauce and cook for another 2 minutes.
Add rice and stir well.
Pour in chicken broth and bring to a boil.
Lower heat and simmer until rice is fully cooked, about 30 minutes.
Season with salt and pepper.
Serve hot, topped with hard-boiled eggs, green onions, fried garlic, and a squeeze of lemon or calamansi.
