Ingredients 

Main Ingredients

  • 1 cup rice
  • 1 lb chicken, cut into pieces
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 6 cups chicken broth
  • 2 tablespoon fish sauce
  • Salt and pepper to taste
  • 2 hard-boiled eggs, sliced
  • Green onions, chopped (for garnish)
  • Fried garlic (for garnish)
  • Lemon or calamansi (optional)

Instructions 

  1. Heat oil in a pot. Sauté garlic, onion, and ginger.
  2. Add chicken and cook until lightly browned.
  3. Pour in fish sauce and cook for another 2 minutes.
  4. Add rice and stir well.
  5. Pour in chicken broth and bring to a boil.
  6. Lower heat and simmer until rice is fully cooked, about 30 minutes.
  7. Season with salt and pepper.
  8. Serve hot, topped with hard-boiled eggs, green onions, fried garlic, and a squeeze of lemon or calamansi.
