Ingredients 

Main Ingredients

  • 2 tablespoon vegetable oil
  • 1 lb chicken breast, thinly sliced
  • 4 cups chicken broth
  • 2 packs ramen noodles
  • 1 cup sliced mushrooms
  • 1 cup shredded carrots
  • 2 cups baby spinach
  • 2 tablespoon soy sauce
  • 2 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 stalks green onions, sliced

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat. Add the garlic and ginger, and cook until fragrant.
  2. Add the chicken slices and cook until browned. Pour in the chicken broth and bring to a boil.
  3. Add the soy sauce and sesame oil. Reduce the heat and let it simmer for 10 minutes.
  4. Add the mushrooms, carrots, and ramen noodles. Cook until the noodles are tender.
  5. Stir in the baby spinach and cook until wilted. Serve the ramen in bowls, topped with green onions and soft-boiled eggs.
