Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 lb Chicken breast, cooked and shredded
  • 4 cups Chicken broth
  • 1 can Diced tomatoes
  • 1 can Black beans, drained and rinsed
  • 1 cup Corn kernels
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 Lime, juiced
  • 1 cup Cilantro, chopped
  • 1 cup Tortilla chips, crushed

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until softened.
  3. Add shredded chicken, chicken broth, diced tomatoes, black beans, and corn. Stir to combine.
  4. Season with cumin, chili powder, salt, and black pepper. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes.
  6. Stir in lime juice and chopped cilantro just before serving.
  7. Serve hot, topped with crushed tortilla chips.
