Ingredients 

Main Ingredients

  • 1 lb fresh asparagus trimmed and cut into 1-inch pieces
  • 1 medium onion chopped
  • 2 tablespoon butter
  • 4 cups chicken broth
  • 1 cup heavy cream
  • to taste salt and pepper

Instructions 

  1. 1. In a pot, melt butter over medium heat. Add chopped onion and cook until translucent.
  2. 2. Add asparagus and chicken broth. Bring to a boil, then reduce heat and simmer until asparagus is tender, about 15 minutes.
  3. 3. Puree the soup in a blender until smooth. Return to pot.
  4. 4. Stir in heavy cream and season with salt and pepper to taste. Heat through, but do not boil.
