Ingredients 

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 2 tablespoon Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoon Olive oil

Instructions 

  1. 1. Heat olive oil in a Dutch oven over medium-high heat.
  2. 2. Add beef and brown on all sides. Remove and set aside.
  3. 3. In the same pot, add onions and garlic. Cook until softened.
  4. 4. Stir in tomato paste, thyme, salt, and pepper.
  5. 5. Return beef to the pot. Add beef broth, carrots, and potatoes.
  6. 6. Bring to a boil, then reduce heat and simmer for 2 hours.
  7. 7. Serve hot.
