Ingredients

  • 6 large eggs boiled, peeled, and chopped
  • ¼ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh chives
  • Salt and pepper to taste
  • 8 slices bread
  • Lettuce leaves optional

Instructions 

  1. Boil the eggs for 10 minutes. Cool and peel.
  2. Chop the eggs and place in a bowl.
  3. Add mayonnaise, mustard, chives, salt, and pepper. Mix well.
  4. Spread the mixture on bread slices. Add lettuce if desired.
  5. Top with another slice of bread. Serve.
