Main Ingredients
- 1 cup Egusi (melon seeds) ground
- 1 cup Palm oil
- 1 large Onion chopped
- 2 cups Spinach chopped
- 1 pound Beef cut into chunks
- 2 cups Water
- 2 cubes Bouillon
- 1 teaspoon Salt to taste
- 1 teaspoon Pepper to taste
1. Blend the egusi seeds until smooth.
2. Heat palm oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
3. Add the ground egusi and stir continuously for about 10 minutes.
4. Add the beef chunks and cook until browned.
5. Pour in the water and add the bouillon cubes. Bring to a boil, then reduce heat and simmer for 20 minutes.
6. Add the chopped spinach, salt, and pepper. Cook for another 10 minutes.
7. Serve hot with your choice of side.
