Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 3 cloves Garlic, minced
  • 1 head Escarole, chopped
  • 2 cans Cannellini beans, drained and rinsed
  • 4 cups Chicken or vegetable broth
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. 3. Add chopped escarole and cook until wilted, about 5 minutes.
  4. 4. Stir in the cannellini beans and broth. Bring to a simmer.
  5. 5. Season with salt and pepper to taste. Simmer for 10-15 minutes.
  6. 6. Serve hot with crusty bread.
