Main Ingredients
- 4 large tortillas
- 6 eggs beaten
- 1 cup shredded cheese
- 1 cup cooked sausage crumbled
- 1 cup diced bell peppers
- 1 cup diced onions
1. Cook the sausage in a skillet over medium heat until browned. Remove and set aside.
2. In the same skillet, sauté the bell peppers and onions until soft.
3. Add the beaten eggs to the skillet and scramble until cooked through.
4. Mix in the cooked sausage, bell peppers, and onions with the scrambled eggs.
5. Place a portion of the egg mixture onto each tortilla, sprinkle with cheese, and roll up into burritos.
6. Wrap each burrito in plastic wrap and place in a freezer bag. Freeze until ready to eat.
7. To reheat, unwrap the burrito and microwave on high for 1-2 minutes or until heated through.
