Main Ingredients
- 1 cup Orzo
- 1 cup Cherry Tomatoes, halved
- 1 cup Cucumber, diced
- ½ cup Red Onion, finely chopped
- ½ cup Kalamata Olives, pitted and sliced
- ½ cup Feta Cheese, crumbled
- ¼ cup Extra Virgin Olive Oil
- 2 tablespoon Red Wine Vinegar
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
1. Cook the orzo according to package instructions. Drain and rinse under cold water.
2. In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
4. Pour the dressing over the salad and toss to combine.
5. Serve immediately or refrigerate for later.
