Main Ingredients
- 1 kg Beef chuck, cut into cubes
- 2 tablespoon Olive oil
- 1 Large onion, chopped
- 3 cloves Garlic, minced
- 2 cups Beef broth
- 1 cup Red wine
- 2 tablespoon Tomato paste
- 1 teaspoon Dried oregano
- 1 teaspoon Dried thyme
- 2 Bay leaves
- to taste Salt and pepper
- 2 cups Water
- 4 Potatoes, peeled and cubed
- 2 Carrots, sliced
1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides. Remove beef and set aside.
2. In the same pot, add onions and garlic. Cook until softened.
3. Return beef to the pot. Add beef broth, red wine, tomato paste, oregano, thyme, bay leaves, salt, and pepper. Stir well.
4. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours.
5. Add potatoes and carrots. Continue to simmer for another 30 minutes, or until vegetables are tender.
6. Adjust seasoning if needed. Serve hot.
