Ground Beef Vegetable Soup Recipe

Main Ingredients
- 1 lb Ground Beef
- 1 cup Chopped Onion
- 2 cloves Garlic, minced
- 2 cups Diced Carrots
- 2 cups Diced Potatoes
- 1 cup Frozen Peas
- 1 cup Frozen Corn
- 6 cups Beef Broth
- 1 can Diced Tomatoes 14.5 oz can
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Oregano
- to taste Salt and Pepper
1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the diced carrots and potatoes. Cook for about 5 minutes.
4. Pour in the beef broth and diced tomatoes. Bring to a boil.
5. Reduce the heat and let the soup simmer for about 30 minutes, or until the vegetables are tender.
6. Add the frozen peas and corn. Season with dried basil, dried oregano, salt, and pepper. Simmer for another 5 minutes.
7. Serve hot and enjoy!
