Ingredients

  • 3 lbs Oxtail
  • 2 tablespoon Vegetable Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 sprigs Thyme
  • 2 cups Beef Broth
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Worcestershire Sauce
  • 2 tablespoon Brown Sugar
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt
  • 2 cups Carrots sliced
  • 1 can Butter Beans drained and rinsed

Instructions 

  1. 1. Heat the vegetable oil in a large pot over medium-high heat.
  2. 2. Add the oxtail pieces and brown on all sides. Remove and set aside.
  3. 3. In the same pot, add the chopped onion and minced garlic. Sauté until softened.
  4. 4. Return the oxtail to the pot. Add thyme, beef broth, soy sauce, Worcestershire sauce, brown sugar, black pepper, and salt. Stir well.
  5. 5. Bring to a boil, then reduce heat to low. Cover and simmer for 2.5 to 3 hours, or until the oxtail is tender.
  6. 6. Add the sliced carrots and drained butter beans. Cook for an additional 30 minutes.
  7. 7. Serve hot with rice or your favorite side dish.
