  • 1 lb Chicken breast diced
  • 1 lb Andouille sausage sliced
  • 1 cup Onion chopped
  • 1 cup Bell pepper chopped
  • 1 cup Celery chopped
  • 3 cloves Garlic minced
  • 2 cups Chicken broth
  • 1 cup Tomatoes diced
  • 1.5 cups Long grain rice
  • 1 teaspoon Paprika
  • 1 teaspoon Thyme dried
  • 1 teaspoon Oregano dried
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chicken and sausage, cook until browned.
  3. 3. Add the onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
  4. 4. Stir in the rice, chicken broth, tomatoes, and spices. Bring to a boil.
  5. 5. Reduce heat, cover, and simmer for 20-25 minutes, until rice is cooked.
  6. 6. Fluff the rice with a fork and serve hot.
