Instructions
Heat the sesame oil in a wok or large frying pan over medium-high heat.
Add the minced garlic and cook until fragrant, about 30 seconds.
Add the mixed vegetables and cook for 2-3 minutes until they start to soften.
Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
Add the cooked rice to the pan and mix everything together.
Pour the soy sauce over the rice and stir well to combine.
Cook for another 2-3 minutes, stirring occasionally, until the rice is heated through.
Garnish with chopped green onions before serving.
