Leftover Mashed Potato Pancakes
Great way to use up leftover mashed potatoes. Crispy on the outside, soft on the inside.

- 2 cups Leftover mashed potatoes
- 1 cup Shredded cheese
- 1 Egg beaten
- ¼ cup Flour
- to taste Salt and pepper
- 2 tablespoon Butter or oil for frying
Mix mashed potatoes, cheese, egg, flour, salt, and pepper in a bowl.
Heat butter or oil in a frying pan over medium heat.
Scoop mixture into the pan, flattening slightly to form pancakes.
Cook until golden brown on both sides, about 3-4 minutes per side.
Serve hot.
