Lemon Curd Ingredients

fresh lemon juice

Instructions
In a medium saucepan, whisk together eggs, sugar, and lemon juice until smooth.
Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 10 minutes).
Remove from heat and stir in lemon zest and butter until smooth.
Strain the curd through a fine-mesh sieve into a bowl to remove any lumps.
Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming.
Chill in the refrigerator for at least 1 hour before serving.
