Ingredients 

Lemon Curd Ingredients

  • 3 large eggs
  • ½ cup fresh lemon juice about 2-3 lemons
  • 1 tablespoon lemon zest
  • ¾ cup granulated sugar
  • ¼ cup unsalted butter cubed

Instructions 

  1. In a medium saucepan, whisk together eggs, sugar, and lemon juice until smooth.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 10 minutes).
  3. Remove from heat and stir in lemon zest and butter until smooth.
  4. Strain the curd through a fine-mesh sieve into a bowl to remove any lumps.
  5. Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming.
  6. Chill in the refrigerator for at least 1 hour before serving.
