Instructions
Peel the lemons, avoiding the white pith.
Place the lemon peels in a large jar and pour vodka over them. Seal the jar and let it infuse for 7 days.
After 7 days, strain the lemon peels from the vodka.
In a saucepan, combine water and sugar. Heat until sugar dissolves to make a simple syrup. Let it cool.
Mix the simple syrup with the infused vodka. Bottle the limoncello and store in the freezer.
