Ingredients 

Main Ingredients

  • 2 cups lobster meat cooked and chopped
  • 1 cup heavy cream
  • 4 cups lobster stock
  • 1 cup dry white wine
  • 1 tablespoon tomato paste
  • 1 tablespoon butter
  • 1 small onion chopped
  • 1 stalk celery chopped
  • 1 carrot carrot chopped
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, melt butter over medium heat. Add onion, celery, carrot, and garlic. Cook until vegetables are soft.
  2. 2. Stir in tomato paste and paprika. Cook for another minute.
  3. 3. Add lobster stock, white wine, and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. 4. Use a blender to puree the soup until smooth. Strain the mixture back into the pot.
  5. 5. Stir in heavy cream and chopped lobster meat. Cook until heated through. Season with salt and pepper to taste.
  6. 6. Serve hot with a garnish of fresh herbs if desired.
