Manhattan Clam Chowder Recipe

- 2 tablespoon Olive Oil
- 1 cup Onion, chopped
- 1 cup Celery, chopped
- 1 cup Carrot, chopped
- 2 cloves Garlic, minced
- 4 cups Clam Juice
- 2 cans Diced Tomatoes (14.5 oz each)
- 2 cans Clams, chopped (6.5 oz each)
- 2 cups Potatoes, diced
- 1 teaspoon Dried Thyme
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ cup Fresh Parsley, chopped
Heat the olive oil in a large pot over medium heat. Add the onion, celery, and carrot. Cook until softened, about 5 minutes.
Add the garlic and cook for another minute.
Pour in the clam juice and diced tomatoes. Bring to a simmer.
Add the potatoes, thyme, salt, and pepper. Simmer until the potatoes are tender, about 20 minutes.
Stir in the clams and parsley. Cook for another 5 minutes. Serve hot.
