Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 1 cup Celery, chopped
  • 1 cup Carrot, chopped
  • 2 cloves Garlic, minced
  • 4 cups Clam Juice
  • 2 cans Diced Tomatoes (14.5 oz each)
  • 2 cans Clams, chopped (6.5 oz each)
  • 2 cups Potatoes, diced
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Parsley, chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion, celery, and carrot. Cook until softened, about 5 minutes.
  2. Add the garlic and cook for another minute.
  3. Pour in the clam juice and diced tomatoes. Bring to a simmer.
  4. Add the potatoes, thyme, salt, and pepper. Simmer until the potatoes are tender, about 20 minutes.
  5. Stir in the clams and parsley. Cook for another 5 minutes. Serve hot.
