Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 2 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Paprika
  • 1 can Diced Tomatoes
  • 1 can Chickpeas, drained and rinsed
  • 2 cups Vegetable Broth
  • 1 cup Spinach, chopped
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Stir in ground cumin, coriander, turmeric, and paprika. Cook for 1-2 minutes until fragrant.
  5. Add diced tomatoes, chickpeas, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in chopped spinach and cook until wilted, about 2 minutes.
  7. Season with salt and pepper to taste. Serve hot.
