Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in ground cumin, coriander, turmeric, and paprika. Cook for 1-2 minutes until fragrant.
Add diced tomatoes, chickpeas, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in chopped spinach and cook until wilted, about 2 minutes.
Season with salt and pepper to taste. Serve hot.
