Ingredients

  • 2 tablespoon Butter
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 teaspoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Apple, peeled and diced
  • 1 cup Red Lentils
  • 6 cups Chicken Broth
  • 1 cup Coconut Milk
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Melt the butter in a large pot over medium heat.
  2. 2. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  3. 3. Stir in the curry powder, ground cumin, and ground coriander. Cook for another minute.
  4. 4. Add the diced carrots, celery, and apple. Cook for about 5 minutes.
  5. 5. Add the red lentils and chicken broth. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  6. 6. Stir in the coconut milk and season with salt and black pepper to taste. Simmer for another 5 minutes.
  7. 7. Serve hot, garnished with fresh cilantro if desired.
