Ingredients

  • 2 tablespoon vegetable oil
  • 2 lbs pork shoulder, cubed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 lb roasted, peeled, and chopped green chiles
  • 4 cups chicken broth
  • 3 potatoes, peeled and cubed
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
  2. Add the onion and garlic, and cook until softened.
  3. Stir in the green chiles, chicken broth, potatoes, salt, and pepper. Bring to a boil.
  4. Reduce heat to low and simmer for about 1 hour, or until the pork is tender and the potatoes are cooked through.
  5. Adjust seasoning with salt and pepper if needed. Serve hot.
