Ingredients 

Pasta Salad

  • 200 g pasta cooked and cooled
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ¼ cup red onion thinly sliced
  • ¼ cup black olives sliced

Dressing

  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • ½ teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. Cook pasta according to package instructions. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, and black olives.
  3. 3. In a small bowl, whisk together olive oil, red wine vinegar, dijon mustard, minced garlic, dried oregano, salt, and pepper.
  4. 4. Pour the dressing over the pasta salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
