Ingredients 

Pie Crust

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • ¼ cup ice water

Filling

  • 6 cups peaches peeled and sliced
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon butter cut into small pieces

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine flour and butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until dough forms. Divide dough in half, shape into disks, and refrigerate for at least 30 minutes.
  3. Roll out one disk of dough on a floured surface and fit into a 9-inch pie dish. Trim excess dough.
  4. In a large bowl, combine peaches, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Pour filling into pie crust and dot with butter.
  5. Roll out the second disk of dough and place over the filling. Trim excess dough, seal edges, and cut slits in the top crust for steam to escape.
  6. Bake for 45 minutes or until crust is golden brown and filling is bubbly. Let cool before serving.
