Pearl Couscous Salad Recipe

Main Ingredients
- 1 cup pearl couscous
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ¼ cup red onion, finely chopped
- ¼ cup feta cheese, crumbled
- 2 tablespoon olive oil
- 1 tablespoon lemon juice
- to taste salt and pepper
1. Bring water to a boil in a saucepan. Add pearl couscous and cook for 10 minutes or until tender. Drain and set aside to cool.
2. In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, and feta cheese.
3. Add the cooled couscous to the bowl. Drizzle with olive oil and lemon juice. Season with salt and pepper to taste. Toss to combine.
4. Serve immediately or refrigerate for later.
