  • 2 cups Mashed Potatoes leftover or freshly made
  • 1 cup All-purpose Flour
  • 1 cup Milk
  • 2 large Eggs beaten
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground
  • ¼ cup Chives chopped

Instructions 

  1. Preheat your waffle iron.
  2. In a large mixing bowl, combine mashed potatoes, flour, milk, beaten eggs, baking powder, salt, and pepper. Mix until smooth.
  3. Fold in the chopped chives.
  4. Lightly grease the waffle iron with cooking spray or butter.
  5. Pour the batter into the preheated waffle iron, spreading it out evenly.
  6. Cook until the waffles are golden brown and crispy, about 5-7 minutes.
  7. Carefully remove the waffles and serve hot.
