Ingredients 

Salmon Burgers

  • 1 lb salmon fillet, skin removed finely chopped
  • ¼ cup breadcrumbs
  • 1 egg beaten
  • 2 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice freshly squeezed
  • ¼ cup fresh basil chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 burger buns toasted
  • 4 lettuce leaves
  • 4 tomato slices

Lemon Basil Mayo

  • ½ cup mayonnaise
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon fresh basil chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. In a mixing bowl, combine the chopped salmon, breadcrumbs, beaten egg, mayonnaise, Dijon mustard, lemon juice, chopped basil, salt, and black pepper. Mix until well combined.
  2. Form the mixture into 4 equal patties.
  3. Preheat the grill to medium-high heat. Grill the salmon patties for about 4-5 minutes on each side, or until fully cooked.
  4. While the patties are cooking, prepare the lemon basil mayo by combining the mayonnaise, lemon juice, chopped basil, salt, and black pepper in a small bowl. Mix well.
  5. Assemble the burgers by spreading the lemon basil mayo on the toasted buns. Place a salmon patty on each bun, and top with lettuce and tomato slices. Serve immediately.
