Instructions
Melt butter in a large pot over medium heat.
Add flour and whisk until smooth. Cook for 1-2 minutes.
Gradually add chicken broth, whisking constantly until smooth.
Add milk and heavy cream, continue to whisk until well combined.
Bring to a simmer and cook for 10 minutes, stirring occasionally.
Add crab meat, salt, and pepper. Simmer for another 10 minutes.
Stir in sherry and cook for an additional 2 minutes.
Serve hot, garnished with a sprinkle of fresh parsley if desired.
