Ingredients 

Main Ingredients

  • 1 piece corned beef brisket (about 4 pounds), with spice packet
  • 10 pieces small red potatoes
  • 5 pieces carrots, peeled and cut into 3-inch pieces
  • 1 large head cabbage, cut into small wedges
  • to cover Water

Instructions 

  1. Place corned beef brisket into the slow cooker, fat side up. Sprinkle the spice packet over the brisket.
  2. Add potatoes and carrots around the brisket. Pour in enough water to cover the brisket.
  3. Cover and cook on low for 8 hours.
  4. Add cabbage wedges to the slow cooker and cook for an additional 1 hour.
  5. Remove brisket from the slow cooker and let rest for a few minutes before slicing. Serve with vegetables.
