Ingredients

  • 2 lbs oxtail
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 2 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat olive oil in a large skillet over medium-high heat. Brown the oxtail on all sides.
  2. 2. Transfer the browned oxtail to the slow cooker.
  3. 3. In the same skillet, add the chopped onion and garlic. Sauté until softened.
  4. 4. Add the sautéed onion and garlic to the slow cooker.
  5. 5. Add the beef broth, carrots, celery, tomato paste, thyme, salt, and pepper to the slow cooker. Stir to combine.
  6. 6. Cover and cook on low for 8 hours, or until the meat is tender and falling off the bone.
  7. 7. Serve hot and enjoy!
