Main Ingredients
- 1 lb smoked sausage sliced
- 1 medium onion sliced
- 2 cloves garlic minced
- 1 medium bell pepper sliced
- 2 cups baby potatoes halved
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- to taste salt and pepper
Heat olive oil in a large skillet over medium heat.
Add the sliced sausage and cook until browned, about 5 minutes.
Add the onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
Add the baby potatoes, paprika, oregano, salt, and pepper. Stir to combine.
Cover the skillet and cook until the potatoes are tender, about 10 minutes.
