  • 4 fillets Catfish
  • 1 cup Cornmeal
  • ½ cup All-purpose flour
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 cup Buttermilk
  • 1 quart Vegetable oil for frying

Instructions 

  1. 1. Heat the oil in a deep fryer or large skillet to 350°F (175°C).
  2. 2. In a shallow bowl, combine cornmeal, flour, salt, pepper, and paprika.
  3. 3. Dip catfish fillets in buttermilk, then dredge in the cornmeal mixture, pressing to coat.
  4. 4. Fry the fillets in the hot oil until golden brown, about 3-4 minutes per side.
  5. 5. Drain on paper towels and serve hot.
