Ingredients 

Main Ingredients

  • 1 cup Red Lentils rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 tablespoon Curry Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Chili Powder
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes 14 oz can
  • 1 cup Coconut Milk
  • to taste Salt
  • to taste Black Pepper
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. 1. Heat oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
  2. 2. Add minced garlic and grated ginger. Cook for another minute.
  3. 3. Stir in curry powder, cumin, turmeric, and chili powder. Cook for another minute until fragrant.
  4. 4. Add rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
  5. 5. Stir in coconut milk and cook for another 10 minutes. Season with salt and pepper to taste.
  6. 6. Serve hot, garnished with chopped cilantro.
