  • 2 cups Strawberries hulled and mashed
  • 1 cup Sugar
  • 1 tablespoon Lemon Juice freshly squeezed

Instructions 

  1. Combine strawberries, sugar, and lemon juice in a saucepan over medium heat.
  2. Stir constantly until the sugar is dissolved.
  3. Increase heat to high and bring the mixture to a boil.
  4. Boil, stirring often, until the mixture reaches 220°F (105°C) on a candy thermometer.
  5. Remove from heat and skim off any foam.
  6. Pour into sterilized jars and seal.
