Main Ingredients
- 8 oz Pasta (rotini or fusilli)
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- ½ cup Red onion, thinly sliced
- ½ cup Black olives, sliced
- ½ cup Feta cheese, crumbled
- ¼ cup Fresh basil, chopped
Dressing
- ¼ cup Olive oil
- 2 tablespoon Red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove Garlic, minced
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
1. Cook the pasta according to package instructions. Drain and rinse under cold water.
2. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, feta cheese, and basil.
3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and black pepper.
4. Pour the dressing over the pasta salad and toss to combine.
5. Serve immediately or refrigerate for later.
